Mutta maala



Ingredients


  • Egg yolks     -     15 (remove the egg yolks carefully from the egg white, keep the egg whites aside)
  • Sugar     -     2  1/2 cup
  • Water     -     3 3/4 cup
  • Egg white     -     1 Tbsp ( to clean impurities in sugar syrup )


Method


Put the egg yolks to a strainer and sieve it (to remove the excess egg white,if any ). Beat it well with a spoon for a minute. keep it aside.
Add sugar to the water in a wide pan, and bring to boil. Reduce the flame and heat it to bring the sugar syrup to one string consistency (add one table spoon egg white to the sugar syrup, leave it for a minute or two and remove the egg white from it. This is to remove any visible impurities in the sugar syrups).
Move the egg yolk into a bottle with a very small hole. Make it into high flame when it starts to boil. Then slowly pour the egg yolk continuously to form thin threads. While poring rotate the bottle in a circular motion. Make sure the opening of the bottle is very small so that you can get very thin threads. Otherwise you will not get very thin thread. Reduce the flame and sprinkle little amount of water (2 -  3 table spoon) to the sugar syrup and remove the mutta mala slowly from the sugar syrup. Repeat the process with the remaining egg yolk using the same sugar syrup.

For the egg white pudding


Ingredients


  • Egg whites     -     15
  • Sugar syrup    -     (remaining sugar syrup from the above step), cooled
  • Milk powder    -     4 Tbsp
  • Cardamom powder     -     2 pinch
  • Ghee (clarified butter)     -     2 Tsp

Method


Blend together the above ingredients except ghee in a blender. Grease a bowl with 2 Tsp ghee, pour the blended mixture to the bowl and steam it till cooked and firm for about 20- 25 minutes. Cool it completely at room temperature. Cut it to pieces in desired shape. Move it to serving plate and top it with mutta mala. Garnish with cherries and serve.

Kinder Style Egg Fry






Ingredients


  • Egg   -    4
  • Onion   -   1
  • Ginger   -    1/2 tsp (chopped )
  • Green chilly    -   2 (chopped )
  • Turmeric powder   -   a pinch.
  • Curry leaves   -   2 sprig (chopped )
  • Salt   -   to taste
  • Flour   -   4 tbsp
  • Bread crumbs   -   1/4 cup
  • Oil   -   2 tbs



Method


Cut the boiled eggs into 2 pieces lengthwise. Separate the egg yolk from egg white.

For masala


Pour oil in a pan, put onion and saute till golden brown in colour, add ginger, green chilly, curry leaves and salt, mix it well. Add turmeric powder, add egg yolks and combine well. Make small balls. Make a smooth flour batter and dip the balls into it. Roll it in the bread crumbs and fry it deeply. Do the same process for the boiled egg whites too. Arrange it as shown in the picture.

Muttapathil


Ingredients


  • Raw rice - 2 cup
  • Egg - 2 nos
  • Water - 
  • Salt - to taste

Method

Boil the water and when it comes to boiling point, switch off the flame and soak the raw rice. The rice should only be partially done. Be careful not to fully cook the rice. In a blender, blend the rice, egg, water and salt till it becomes a smooth batter. It should be like dosa batter. Heat a flat pan and pour one ladle batter onto it. Don't spread the batter. Keep it till holes form on the top side. Don't smear oil on top of it. Flip and cook for a minute. Remove it from the pan and spread ghee. Wipe the pan with a tissue after each muttapathil is made.

Egg Curry Dhaba Style


Ingredients


  • Boiled egg - 3 (peeled)
  • Onion - 3 medium (grind to paste)
  • Tomato - 4 (boiled and pureed)
  • Ginger paste - 1 tsp
  • Garlic paste - 1 tsp
  • Cinnamon stick - 2 (small)
  • Cardamom - 3
  • Cloves - 3
  • Oil - as needed 
  • Kashmiri chilly powder - 3 tsp
  • Coriander powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Garam masala powder - 1/2 tsp
  • Coriander leaves - few (finely chopped)
  • Salt - to taste
  • Amchoor powder - 1/2 tsp
  • Green chilly - 2 (finely chopped)
  • Fennel seeds - 1/4 tsp
  • Water - 1 cup


Method

Take a deep bottom frying pan and pour oil into it. Make slits in the boiled eggs and fry it until it turns golden brown. Remove from the oil and keep it aside. Heat a deep bottom sauce pan and all 2 tbsp oil. Put whole spices like cinnamon sticks, cardamom, cloves and fennel seeds into it and fry for a few seconds. Now add onion paste to it and fry until the onions are well cooked and the raw smell disappears. Add the finely chopped green chilly to it and combine well. Now add ginger garlic paste and stir and saute it for one minute. Add kashmiri chilly powder, turmeric powder, coriander powder and salt and then combine it well. Then add the tomato puree to it and mix well. Add 1 cup water to it and allow it to boil. Once the gravy reaches thick consistency, add the boiled eggs to it. Add garam masala powder and amchoor powder and stir it for a minute. Adjust salt at this level. Turn off the flame and garnish it with coriander leaves and serve it hot.

Mutta Surka


Ingredients


  • 1. Raw rice - 2 cups
  • 2. Boiled rice - 1 cup
  • 3. Egg - 2 nos
  • 4. Coconut milk - 4 tbs
  •     Salt
  •     Oil - for frying
  •     Green chilly - if required
  •     Curry leaves - if required


Method


Soak the raw rice for 2 hours. Add all the ingredients from 1 to 4 and grind it till we get a thick batter. Heat oil in a kadai and pour 1 ladle of mixture and fry both the sides. You can add green chilly and curry leaves into the batter if required.
